miso-glazed eggplantsI found this really easy and yummy recipe for eggplants with miso glaze that I wanted to share with everyone: http://momofukufor2.com/2010/06/nasu-dengaku-miso-glazed-eggplant-recipe/

I made it twice already, and Hero Material loved it (and he doesn’t normally care for eggplants). But I made a few changes to the recipe after my 1st try.

First, I bought miso with dash in it because I think it tastes better. But if you’re vegan or vegetarian, use the regular plain miso! Dash is almost always made with katsuoboshi, which is basically dried fish.

Second, I used only 2 TBSP of sugar, not 3. Three’s just too too sweet. (Mirin BTW is sweet.)

Third, I used white wine instead of sake when I didn’t have any at home.

Finally, the recipe says the sauce is enough for 2 eggplants, but it’s way too much for 2. You can cook 3-4 eggplants with the amount of miso sauce/glaze the recipe makes.

And do NOT add salt to this recipe. Miso is pretty salty. :)
